Foccacia 2 Versions - Sweet & Salty
Ingredients
Dough (sufficient quantity for 1 large focaccia – cookie plate size)
- 3 cup of flour
- ½ teaspoon of salt
- 1 teaspoon of instant yeast
- ¼ cup of olive oil
- 1 cup of tepid water
*To save time, you can use a ball of pizza dough from the store. Be careful, they are often sold frozen – so plan time for the dough to thaw.
Sweet garnish (for 1 large focaccia)
- ¾ cup of cranberries or other dried fruits
- ¾ cup of Laura Secord pure milk chocolate chips
- Sugar to sprinkle on the dough
- Olive oil to brush on the dough
Salty garnish
- 6 tablespoons of ground basil leaves
- ½ cup of Laura Secord 70% cocoa mini-chocolate chips
- Fleur de sel to sprinkle on the dough
- Olive oil to brush on the dough

- Mix all the dry ingredients in a bowl. Add oil and water and knead for ten minutes on a floured work surface.
- Incorporate the chosen garnish to the dough. Roll the dough in order to keep the garnish inside and knead it for a few minutes. Don't knead it too much as the chocolate may melt in your hands.
- Put the dough balls in a large bowl that was oiled prior to this and let the dough expand for 90 minutes. The dough will double in volume.
- Preheat oven at 400°F.
- Spread the dough on a cooking plate covered with parchment paper and let it sit for 10 minutes.
- Brush the dough with olive oil and sprinkle with either fleur de sel or sugar, depending on your chosen garnish and bake for about 20 minutes or until the dough is golden and baked.
