Coconut, Matcha and Chocolate Energy Balls
Ingredients
- ½ cup coconut flour (found in the organic section of grocery stores)
 - 6 tbsp of maple syrup
 - 4 tbsp of sweetened grated coconut
 - 1 ½ tbsp of coconut oil
 - 4 tsp Matcha powder
 - ¼ cup pistachio
 - ½ tsp vanilla extract
 - 1 avocado
 - 3 100 g Laura Secord maple crunch milk chocolate bar
 
- In a food processor, put all the ingredients except the maple milk chocolate and mix until you obtain a uniform paste.
 - Using your hands, form balls of approximately ½ tbsp. of the mixture and place them on a baking sheet lined with parchment paper.
 - Place in the refrigerator for about 30 minutes.
 - Melt the chocolate in the microwave for about 1 minute 30 seconds, stirring every 15 seconds.
 - Dip the balls in the chocolate and sprinkle with a little coconut (if desired).
 - Return the balls to the refrigerator until the chocolate hardens.
 - When the chocolate is hardened, all that’s left is to enjoy!!!
