Ultra “Fluffy” Triple Chocolate Cupcake

Ingredients
For the cupcakes
  • 2 cups of flour
  • ¼ cup of cocoa powder
  • 1 tbsp of baking powder
  • 1 egg
  • ¾ cup of milk
  • ½ cup of applesauce
  • ⅓ cup of sugar
  • ¼ cup of vegetable oil
  • 1 cup of Laura Secord chocolate chips
For the icing
  • 1 Laura Secord 70% Dark Chocolate bar
  • 30 g of butter
  • 15 ml of 35% cream

For the cupcakes
  1. Preheat oven to 350°F.
  2. In a small bowl, sift together the flour, cocoa powder and baking powder.
  3. In another larger bowl, whisk together the egg, milk, applesauce, sugar and oil.
  4. Add the dry ingredients (except the chocolate chips) to the wet ingredients and stir until smooth.
  5. Add the chocolate chips and mix gently.
  6. Oil 12 cavities of a cupcake mold and distribute the mixture evenly.
  7. Place in the oven and bake for about 17 minutes or until a toothpick comes out clean.
  8. Let it sit before adding the icing
For the icing
  1. In a bain-marie, melt the dark chocolate and butter. Mix well and let cool for a few minutes.
  2. Add the cream and mix well once again.
  3. Using a spoon, glaze the previously cooled cupcakes.
  4. Let it sit so that the icing sets and enjoy!
