Ultra “Fluffy” Triple Chocolate Cupcake
Ingredients
For the cupcakes
- 2 cups of flour
- ¼ cup of cocoa powder
- 1 tbsp of baking powder
- 1 egg
- ¾ cup of milk
- ½ cup of applesauce
- ⅓ cup of sugar
- ¼ cup of vegetable oil
- 1 cup of Laura Secord chocolate chips
For the icing
- 1 Laura Secord 70% Dark Chocolate bar
- 30 g of butter
- 15 ml of 35% cream

For the cupcakes
- Preheat oven to 350°F.
- In a small bowl, sift together the flour, cocoa powder and baking powder.
- In another larger bowl, whisk together the egg, milk, applesauce, sugar and oil.
- Add the dry ingredients (except the chocolate chips) to the wet ingredients and stir until smooth.
- Add the chocolate chips and mix gently.
- Oil 12 cavities of a cupcake mold and distribute the mixture evenly.
- Place in the oven and bake for about 17 minutes or until a toothpick comes out clean.
- Let it sit before adding the icing
For the icing
- In a bain-marie, melt the dark chocolate and butter. Mix well and let cool for a few minutes.
- Add the cream and mix well once again.
- Using a spoon, glaze the previously cooled cupcakes.
- Let it sit so that the icing sets and enjoy!
